Day two menu: Roasted Cayenne and Cardamom Butternut Squash and a Spinach and Feta Ravioli with a Lemon Butter Sauce and chocolate piece for dessert.
I felt like the lemon butter would go amazingly with the spinach ravioli, a fun contrast. It did, though I need to perfect the sauce, it needed some herb and a dash of pepper. Ravioli turned out nice, maybe a tad over done. I thought that beautiful combo would be further complimented by a rich, slightly crunchy, slightly spicy squash…
Except that I burnt the squash, and as it turns out, also under seasoned it, apparently I grossly underestimated the amount of seasoning it can take. A sprinkle here and a sprinkle there… didn’t cut it.
Nick was two and half hours later than expected… so I made is parfaits again to make up for the squash. All in all, it could’ve been worse, but seriously burning half of the meal, does but a dent in a persons confidence.
I made a sauce though! Yay me!
