Adventures in Cooking: Quinoa Bowl

Another first for me… making Quinoa. Which I’ll tell you now, I will be doing again. Love this grain in general, I’ve just been too lazy in the kitchen to diverge from rice.

Mango, Avocado, and Black-bean Quinoa bowl. Also featuring red onion, fresh cilantro, and a lime honey olive oil dressing of sorts.

Sliced and diced the avocado, mango, and onion while the quinoa was cooking. Cooked up the beans I’d soaked as well. Seasoned everything with a little salt and pepper.

For the dressing, olive oil, lime juice, honey, and salt and pepper all whisked together.

It was surprisingly easy and turned out fairly well. I think I over shot the beans a little and next time I think I’ll add some red pepper flakes and make a little more dressing. But over all I really enjoyed this and would suggest it for other beginning cooks who like fresh flavors and protein sans meat when possible.
